Lardiata Napoletana is one of the most authentic sauces of Neapolitan cuisine. Often described as the “Neapolitan answer to Amatriciana”, it is an old recipe that has become almost forgotten and is now difficult to find even in the trattorias of Naples.
Traditionally, the lardo is very finely chopped and allowed to melt slowly into the tomato sauce. This gives the sauce remarkable depth, roundness and aromatic intensity, without making it feel heavy.
For this recipe, we use Lardo di Colonnata PGI, one of Italy’s finest delicacies. It is aged for several months in marble basins together with herbs and spices. This distinctive production method gives it its delicate texture, elegance and unique aromatic complexity.
A rare recipe that we have rediscovered to bring back the authentic flavour of one of the most fascinating preparations in the Neapolitan culinary tradition.
